The chef

Cédric Laveau

Chef Cédric Laveau was born in Auxerre in the Yonne region. He decided to move to Carcassonne after starting out in Pierre Liperi's kitchens, where he completed his apprenticeship working with oeufs cocottes, Burgundy snails and Chablis, all of which hold no secrets for him. It was in the heart of the Cité that he became second in command at the Ecu d'Or restaurant. In 2005, he joined Jean-Pierre Lombard at the Mercure hotel, eventually succeeding him as Chef in June 2008.

The unique menu is a choice of products featuring the best that the 4 seasons have to offer and to introduce to our guests, all enhanced by the Chef's secret twist. The menu is a mix of surprises and gourmet dishes, using produce from short distribution channels, because the Chef is determined not to tamper with our local nuggets.
And for those with a taste for freshness, the Chef suggests you compose your own generous and tasty salad. Here again, another way to celebrate nature on your plate.
